Since Phil was working until 8, I used some of our farm fresh eggs we got from his parents to make some scrambled eggs with spinach and tomatoes. We also had some roasted garlic rosemary bread to use up, so I made a slice of toast with blue cheese to go with it. It was a perfect meal for a lonely gal and went well with red wine!
Phil is now on his way home and picking up more wine and frozen...
